Curried Chicken Salad Sandwiches - This is SOOO Good!!!
Prep Time: 15 minutes
Cook Time: 2 minutes
1/2 cup light mayonnaise
1/4 cup plain low-fat yogurt
1 tsp. curry powder
1 tsp. lemon juice
4 cups shredded cooked chicken breast
1/2 cup seedless red grapes, halved
1/2 cup chopped walnuts, toasted
1 (8oz) can pinapple tidbits in juice, drained
1/3 cup diced red onion
16 slices whole wheat double-fiber bread (Nature's Own is very good)
8 lettuce leaves
Combine first 5 ingrediants in a large mixing bowl. Add chicken and next 4 indrediants; stir well to combine. Top each of 8 bread slices with 1/2 cup chicken salad. Top each with lettuce and a bread slice.
Yields: 8 servings (serving size -1 sandwich)
Calories: 321
Fat: 14.1grams
Carbs: 28grams
Fiber: 10.9 grams

Week 4 Biggest Loser.............
Hollie Lott!! 12lbs Down! To date in 4 weeks Hollie has lost a total of 27lbs! WOW, congratulate her next time you see her....
Be on the lookout for Hollie's inspriational encouragement and just how she has done so well! Also, since Mike, her husband has been so sick, hopefully we will get his take on being the biggest loser in Week 3.

Did you know.........
Did you know that Ms. Marty has an ENTIRE section in the Library dedicated the the Biggest Loser Club that spotlights all things related to Health, Nutrition and Exercise! When you enter the Library it is spotlighted on the Green Wall - Thanks Mrs. Marty!
9 Additional Ways to Eat Healthier....
Breakfast:
1. Choose light yogurt made with no-calorie sweetener.
2. Split a bagel with someone or wrap up the other half for tomorrow's breakfast.
3. Substitute a no-calorie sweetener for sugar in your coffee, tea and cereal (you will be surprised how many calories you will save by doing so).
Lunch/Dinner:
1. Trim all the fat from beef, pork and chicken.
2. Enjoy your salad WITHOUT croutons and bacon bits.
3. Bake, broil or grill chicken and fish rather than frying.
Desserts:
1. Satisfy your sweet tooth with a sliver, bite or taste of dessert instead of a full portion. The best advise I ever heard was this: THE FIRST BITE TASTES LIKE ALL THE REST! That was such a blinding flash to the obivious moment!
2. Cut a half slice of cake or pie.
3. Substitute half the oil in a recipe with applesauce with baking.
